Ito, part of the renowned ESCA Group (home to Aalia 2 Hats, Nour 1 Hat, Besa 1 Hat, Ame & Loa, Joji, and more), is a 1-Hatted restaurant in Sydney celebrated for its modern Japanese cuisine with an Italian influence. Blending precision, artistry, and warmth, Ito offers a truly unique dining experience. We are seeking an experienced waiter to join our front-of-house team and deliver the exceptional level of service our guests expect.

About the Role

As a waiter at Ito, you will:

• Provide attentive, refined service in line with our Japanese-Italian fine-dining concept.
• Guide guests through the menu, highlighting the harmony of Japanese flavors and Italian influences.
• Deliver professional beverage service, including wine, sake, and Italian varietals.
• Work seamlessly with FOH and kitchen teams to ensure a polished guest experience.
• Maintain Ito’s reputation as a 1-Hatted dining destination.

What We’re Looking For

• Previous experience in fine dining or high-end hospitality.
• Confidence in food and beverage service, ideally with knowledge of Japanese cuisine and/or Italian wines.
• Strong attention to detail, communication skills, and guest focus.
• Ability to thrive in a fast-paced, precise service environment.
• A genuine passion for hospitality and creating memorable experiences.
